Dinner 6
Tonight we had Four-Cheese Lasanga, Devilled Eggs (I seem to make these alot, maybe b/c theyre so yummy and easy to make), and a Strawberry-Banana Milkshake.

Dinner 4
First day back at school. Hungry. Dinnertime. Made something up with whatever was in the fridge. Here's what I got:
First. Sweet Chilli Mushrooms With Roasted Red Peppers
And second. Something so bold. Something so unusual. Something no kid has ever dared to eat...I can't even believe it as I type these words...*drumroll* BRUSSEL SPROUTS.
Dare I say it...they were actually GOOD.

Dinner 2
Tonight I made Lemon Garlic Tilapia and Chinese Chicken Fried Rice :) They're simple and fast to make. Recipes are below.
Lemon Garlic Tilapia:
2 tilapia fillets
1 fresh lemon
1/2 tablespoon butter, melted
1/2 clove garlic, finely chopped
1 teaspoon fresh coriander
pepper to taste
meat tenderizer (salt and papain)
Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with non-stick cooking spray.
Rinse tilapia fillets under cool water, and pat dry with paper towels.
Squeeze 1 fresh lemon and marinate fillets in meat tenderizer mix, salt, pepper, and lemon juice. Place into baking dish.
Drizzle butter on top. Sprinkle with fine chopped garlic, and coriander.
Bake in preheated oven until the fish is white and flakes when pulled apart with a fork, about 30 minutes.
Chinese Chicken Fried Rice:
1/2 tablespoon canola oil
1/2 pound cooked, cubed chicken meat
*1 packet frozen vegetables: corn, carrots, peas, lima beans, string beans
2 cups cooked white rice
1/3 cup soy sauce
1 clove garlic, chopped
2 tablespoon soy sauce
*(you can also use fresh vegetables)
Heat oil in a large skillet over medium heat. Add chopped garlic and saute for 2-3 minutes, then packet of frozen vegetables. Stir-fry for 5 minutes. Stir in chicken and 2 tablespoons soy sauce and stir-fry for another 4-5 minutes. Then add rice and stir thoroughly. Finally, stir in 1/3 cup soy sauce, heat through and serve hot.
