Iftar Entry 2

Tonight we had devilled eggs, fruit salad, spinach and articoke Quiche (this was store-bought, maybe soon I'll learn to make my very own), a tropical berry smoothie, and very berry shortcake. These are all simple, easy and quick dishes you can make for your Iftar.

Devilled eggs: Boil 4 eggs. Peel and cut horizontally in halves. Scoop out the cooked yolk center into a bowl. Gently mash the yolks and add 2-3 tbsp of light whipped mayonnaise. Mix in a pinch of salt and black pepper followed by a tsp of sweet pickled relish. Mix and pour a spoonful into each of the egg halves. Garnish with paprika and bits of pickle. This make a delicious snack and finger food.

Fruit salad (fruit chaat for you desis :]) : 1 cubed apple, 1 cubed pear, 1 cup red seedless grape, 1 ripe Mango - Skinned and cubed into 1/2 inch cubes, 2 bananas cut into round slices, 3 tbsp sugar, 2 tsp Chaat masala. Mix it up well and serve cold.

The spinach and artichoke Quiche is from Costco lol :). But I did however find a nice recipe in the1st Traveler's Choice Internet Cookbook you can use to make your Spinach and Artichoke Quiche from scratch.
Ingredients
Custard mix:
6 eggs
3 cups milk
nutmeg, white pepper, and salt to taste
Quiche:
One 14-ounce can of artichoke hearts chopped in small pieces
1 cup spinach, finely chopped
1 cup Parmesan cheese, freshly grated
2 pre-baked 8-inch pie shells

To make the custard, mix the ingredients together. Place spinach, artichoke hearts, and cheese into pie shells. Add the custard mixture. Place in a 375-degree oven and bake 45 minutes to one hour until the custard is set and a toothpick inserted comes out clean.

Note: If using processed Parmesan cheese, use less salt in the custard mix. If using frozen spinach, squeeze out water after defrosting.

For the tropical berry smoothie, blend 1 cup of blueberries and 1 cup of strawberries. Add about 3/4 cup of coconut milk along with 2-3 tsp of Splenda No-Calorie Sweetner (you can use sugar as well). Add 1 cup ice and blend well. Top with a slice of fresh strawberry and serve chilled.





















For dessert, we have very berry shortcake. Preheat the oven to 425 degrees. Mix the following ingredients: 2 1/3 c. Bisquick baking mix, 1/2 c. milk, 3 tbsp. sugar (use Splenda No-Calorie Sweetner for a sugar-free dessert), and 3 tbsp. butter (or margerine for a healthier alternative) to form a dough. Knead 8-10 times on surface dusted with Bisquick. Roll 1/2 inch thick. Cut with 3-inch cutter dipped in Bisquick. Bake on cookie sheet until golden brown, 10-12 minutes. Split shortcakes, fill and top with mixture of blackberry jam, rasberry jam, crushed blackberries, crushed blueberries, and crushed rasberries. Chill for 2-3 hours and serve with a side scoop of Vanilla Double Churned Extra Creamy Fat-Free Ice Cream. Make 6 servings.

















I definitely recommend this dessert for you. It's so good it had my family licking their fingers for more. You won't regret it and the best part about it...it's sugar free!
